Chewy Molasses Spice Cookies

Ingredients
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 12 Tbsp (3/4 cup) unsalted butter, softened
  • 1/4 cup molasses
  • 1 large egg

Preheat the oven to 350 degrees. Whisk the flour, salt baking soda, cinnamon and nutmeg. Set aside 1/2 cup sugar. Beat the butter and remaining sugar until combined. Add the egg and the molasses. Reduce mixer speed and gradually add the rest of the dry ingredients. Mix until a dough forms. Pinch off 1 inch chunks of dough, and roll them into a ball. Roll the balls through the sugar that you set aside earlier and arrange them on a baking sheet, 3 inches apart.
I like to flatten the balls a little with the bottom of a drinking glass that I've dipped in sugar. The larger you make the balls, the chewier the cookies.
Bake 10 to 15 minutes until the edges are just firm. Cool for 1 minute and transfer onto racks to cool completely. Store airtight for 3 to 4 days.

Good luck getting them to last that long. Mine always vanish within 24 hours.
