Baked Spiced Fruit

Ingredients
  • 1 can (29oz) peach halves drained
  • 1 can (20 oz) pinapple slices in fruit juice drained(reserving 3/4 c juice)
  • 1 jar(about 14 oz) spiced apple rings, drained
  • 1/2 c maraschino cherries
  • 3/4 c firmly packed brown sugar
  • 1/3 c butter or margarine
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp curry powder
  • 4 tsps cornstarch
  • 4 tsps water

Preheat oven to 350 degress. Arrange fruit in a 9 x 13 baking dish. In a small saucepan over med heat, combine reserved pinapple juice, brown sugar , butter, cinnamon, cloves, and curry powder. Stirring pinapple juice mixture frequently, cook 7 to 8 min. In a small bowl, combine cornstarch and water. Stirring constantly, add cornstarch mixture and continue to cook about 2 min or until mixture thickens. Pour sauce over fruit. Bake 25 to 30 minutes. Serve warm.
